OAT (OR RICE FLAKES) – COCONUT SLICE
- 1 cup oats or rice flakes (rice flakes are bought in bulk at health food shop and are very crispy.)
- ¾ cup coconut
- 1 cup rice flour
- ½ cup raw sugar
- 125 g butter or coconut oil
- 2 tablespoons honey
- 2 tablespoons water
- ½ teaspoon bi-carb soda
Place well mixed dry ingredients in a bowl.
Melt butter or coconut oil, add honey and water and then add bi-carb soda (which will foam)
Add to wet to dry ingredients and mix well.
Press into greased and lined lamington tin
Bake 25 – 30 mins in moderate oven.
Cool in tin and cut when cold.
